Winter is coming. Time to Make Homemade Tomato Soup
There is nothing quite as comforting in winter as a delicious bowl of homemade tomato soup.
And it is healthy! An average bowl of tomato soup provides 16% of the daily-recommended value of vitamin A and 20% of the daily-recommended value of vitamin C require. So, a bowl full of tomato soup a day can definitely help to keep the body healthy.
There are many kinds of tomato soup, from the instant kind to the tinned soup and then the best of all, fresh tomato soup made with juicy ripe tomatoes.
In summer, the best dish is cold tomato soup (or Gazpacho), but in winter we want it steamy and creamy.
Quality of your Tomatoes
Tomato Soup is not difficult to make from scratch. It only needs a few fresh ingredients you will be able to easily transform into delicious comfort in a bowl. This soup can be prepared in under and hour, making it the perfect meal for the whole family.
Remember, the better the quality of your tomatoes, the better the taste of your soup.
The most important when cooking with tomatoes, is to remember their acidity and always add a bit of sweetness to soften the taste.
Basic Tomato Soup Recipe
Heat the olive oil (and butter) in a large, heavy-bottomed pot over medium-low heat. Add the onions, celery and (carrots and/or red peppers) and sauté for about 10 minutes, until very tender. Add the garlic and cook for 1 minute. Add the tomatoes, sugar, tomato paste, basil, chicken or vegetable stock, salt, and pepper and stir well.
The fresh and tangy taste of this tomato soup is out of this world.
There are many great tomato soup recipes including this one with tomatoes from a tin. Canned tomatoes are a sunny opportunity to enjoy that robust tomato flavour all year-round.
Roasted Tomato Soup
Garden fresh tomatoes, red peppers, garlic and fresh herbs are tenderly roasted to bring out their natural flavours throughout, then blended to a creamy finish. (You can also add celery and carrots if you like.)
This is really easy to make – just cut all the veggies into bite size pieces, combine with garlic and seasoning and roast in a very hot oven until the veggies are charred a little.
Meanwhile get a broth going – chicken or vegetable – and when it is boiling, add the roasted veggies. Add some fresh herbs (basil, parsley, oregano, dhania) and boil for a few minutes.
Using a hand blender, blitz the mixture till smooth and creamy. Pour into warmed bowls and drizzle with cream, plain yoghurt and sprinkle with parmesan cheese.
On the Side
What does your family enjoy with tomato soup – a crusty roll, some grilled cheese bread? For garnish, you can also streak pesto across the top and drop some grated Parmesan on top.
